Farm stand Frittata
3/4 egg whites
4 organic eggs
1 cup of organic mozzarella divided (1/4 cup sprinkled on top the last minute)
1/2 chopped jalapeƱo
1 ear corn cut off the cob (cooked)
1/3 cup heirloom toms (seeded)
Whisk the eggs together with some salt and pep then add the remaining ingredients. Spray your pan(i use coconut oil spray) then add the egg mixture. Allow to cook for about 10 minutes on med low heat until the sides are set. Place the frittata under the broiler for the remainder of the cooking time(about 5-10 minutes). Sprinkle the cheese on the last minute of cooking. When the cheese is melted take out and allow the eggs to rest for a few minutes before cutting! Serve with your favorite seasonal salad!
